Rising costs and and inconsistency in freight channels meant that our source for Swiss Water Process decaffeinated coffee was increasingly unreliable due to the amount of transport required to get it to our roasting facility.\u003cbr\u003e\u003cbr\u003eLike many roasters, we began sourcing what is commonly referred to as “Sugar Cane Process” decaf because it is much more readily available, and tends to produce a much more complex cup of coffee more similar in profile to our caffeinated offerings.\u003cbr\u003e\u003cbr\u003eWe’ve had several customers ask about the change, so we wanted to provide a little bit more information on the process. The process is also known as Ethyl Acetate (E.A.) decaffeination. Ethyl Acetate is a naturally occurring ester present in a number of fruits as well as during the fermentation stage of processing sugar cane into granulated sugar. This natural ester acts as a solvent that bonds naturally to caffeine molecules, so coffee seeds are steamed and soaked in a solution of water and ethyl acetate until no caffeine is detectable, then the coffee seeds are rinsed until there are no remaining traces of ethyl acetate and dried to prepare for export. \u003cbr\u003e\u003cbr\u003eBecause the E.A. process can be done in the country of origin, E.A. decaf supply is not as dramatically impacted by disruptions in shipping lane traffic or increases in freight costs. The Fall of the James occurs smack dab in the middle of the City of Richmond and it’s where the elevation of the land drops about 100 feet. The fall line creates world-class white water rapids among large granite almost alien-like boulders in the James River as it passes right through the middle of downtown. The James offers a plethora of things for a nature-lover to do like kayaking, rock climbing, hiking, and bird watching. Needless to say, the river is a special place for most Richmond residents, especially the outdoor enthusiast. Even if you’re not an “outdoorsy” person, you’re bound to cross the river while going across one of seven bridges or two pedestrian bridges as you bisect the city from north to south. We wanted to give an homage to this special river that makes Richmond so unique by outlining the shape of the river on our Richmond Blend label. After being sorted and de-pulped, the coffee is dry-fermented for 96 hours before being washed and dried on raised beds for 12 to 14 days.
